Salted macarons with creamed cod

  • 1 sachet of Gourmet Black Garlic and Shiitake Crackers
  • Cod fillets 250 g
  • Extra virgin olive oil 80 g
  • Organic lemon ½
  • 1 clove garlic
  • Salt up to taste
  • Parsley to taste
  • Organic chopped pistachios to taste
  • Balsamic vinegar glaze to taste

Let's prepare it together!

First clean the cod fillets by removing the skin, cut it into small pieces and put it in a saucepan. Add the clove of garlic, parsley and half a lemon, then fill with cold water to cover the fish and bring to a boil and cook for about ten minutes, removing the foam that will form on the surface with a skimmer. The cooking time may vary depending on the size of the pieces, check that it is well cooked. After this time, drain the pieces of cod, taking care to preserve the cooking water, transfer it to a bowl to better check that there are no bones left and let it cool and then pour it into the bowl of a mixer or planetary mixer. Operate the planetary mixer at low speed and add the Evo oil flush, the parsley and salt.

Blend everything for a few minutes and if necessary add half a cup of cooking water to make the cream softer and more homogeneous and with a spreadable consistency.

Now create the macarons! Take a black garlic cracker and with a teaspoon spread a knob of cod cream, close with a second cracker by pressing lightly and roll it in the chopped pistachios. Do this until you run out of black garlic and shiitake crackers.
