Pasta with Shiitake and Radicchio pesto

A simple recipe with a genuine flavour, to bring to the table a pasta that is different from the usual, and very rich in Vitamin D!

Ingredients:
- 1 head of radicchio
- 1/2 Onion
- 1 sprig of rosemary
- 1/2 Glass of water
- 230g of pasta
- Extra virgin olive oil
- White wine
- A spoonful of Ricotta
- One pack of sliced dried Shiitake mushrooms 8g
- Salt and Pepper To Taste
Let's prepare it together!
In a pan, combine the radicchio, onion and rosemary; add salt, pepper and a little water and leave to simmer covered with a lid. Transfer to the blender jug, add a drizzle of oil, a spoonful of ricotta and create a cream.
In the meantime, bring the water to the boil and cook the pasta.
Separately, sauté the mushrooms with oil, garlic and a pinch of salt, deglaze with white wine and add a ladle of soaking water. As soon as the mushrooms have completely absorbed, add the radicchio cream to the mushrooms.
Drain the pasta and add the freshly prepared cream.
The pasta with radicchio and mushroom cream is ready to taste!
