Prodotto oltre il TMC? Non buttarlo, non fa male!

Product beyond TMC? Don't throw it away, it doesn't hurt!

The minimum shelf life (TMC) is the date to which the food product refers for the maintenance of its specific properties, in adequate storage conditions.

Nowadays we are all more sensitive to the environment and food waste and, for this reason, IoBoscoVivo has decided to suggest the 3 fundamental rules to understand if the product is still edible:

1. Store the package as indicated on the label itself : away from light and heat, enemies of food raw materials. Remember that our products are free of preservatives!

2. Once you open the package, use it immediately : air (oxygen in particular) is also an enemy of raw materials. In fact, our packages are single-dose to avoid waste!

3. Evaluate, with the help of your senses, the characteristics of the product , in particular:

  • View: evaluate the appearance of the product;
  • Smell: evaluate the smell of the product: if it is still present and above all if substances with an anomalous odor have formed;
  • Taste: allows you to evaluate the aroma of the product, if it is still present and above all if it has been modified by some substances;
  • Hearing: in baked products it can allow you to evaluate their crunchiness!

Here are some tips on how to set up this organoleptic test:

Criteria: E: excellent / A: acceptable / NA: not acceptable

Score

Odor / Taste

I wait

AND

typical preparation

well preserved, flours and seeds flow smoothly; baked goods intact and of their original colour

TO

tendency towards neutrality, the aromas are less intense

well preserved, but the color has changed slightly.

NA

hints of rancid, oxidized fats

flours and seeds do not flow but have formed lumps; baked goods no longer intact; original color modified.

Remember that these tips are for non-perishable products, like ours, i.e. those with the words "best before..." on the back. For all other wordings, it is best to respect the expiry dates provided by the manufacturer!
