Traceability of food products

In the world of the food industry it is essential to have the possibility of reconstructing the history of a food, of an animal intended for food production or of a substance intended or capable of becoming part of a food, starting from production up to the moment of its distribution, in order to guarantee a timely withdrawal from the market, should problems arise relating to the food safety of the product itself and therefore becoming a risk for the consumer.

The primary objective is to guarantee food safety for consumers and safeguard the agri-food sector. To do this, the European Union, and therefore also Italy, have adopted the global intervention strategy " safety from farm to fork ". With this formula we want to face the challenge of guaranteeing healthy and safe foods along the entire production chain also by preparing integrated control plans based on a combination of very strict requirements for food products and for the health and well-being of animals and plants , whether produced within the EU or imported. In order to apply this formula it is therefore appropriate to trace everything that can enter the food chain, and follow the product's path starting from the raw materials used until obtaining the finished product intended for the final consumer.

To do this, the manufacturer must place an "imprint" on the label of each product that is representative of the documentation collected by the various food sector operators involved in the production process. This imprint consists of the batch number (composed of letters and numbers generally preceded by the letter L) which must be easily legible and indelible. In some cases it is possible to put the TMC or the expiry date with day and month which represent an indication of the batch.

Track and trace systems facilitate the identification and subsequent withdrawal from the market of foods found to be unsafe. However, there is often confusion with these terms which are used as synonyms when in reality they have two very distinct meanings:

  • Traceability or tracking represents the possibility of following the path of a raw material or a production batch through all the steps from one commercial entity to another, within the production chain, from the production phase to the transformation, until distribution. It allows us to identify the flow of goods, accompanied by a flow of information, which is adequately recorded and stored at each step. It is the path that starts from the raw materials and arrives at the finished product.
  • Traceability or tracing, on the other hand, represents the reverse path and implies the possibility of reconstructing the entire path of a product backwards, therefore starting from the finished product and arriving at the raw materials used at the start. It is the path that starts from the finished product and allows us to trace the raw materials used.

The batch represents a fundamental part of food traceability and traceability systems and allows us to identify the path taken by the food "from field to table".

In addition to being a fundamental prerequisite for managing food safety and emergencies, traceability plays an important role in guaranteeing product quality.
