Tiger Nut and Blackcurrant Energy Bites (No-Bake)

This recipe combines the sweetness of tiger nuts with the tartness of blackcurrants, creating delicious and nutritious energy bites, perfect for a quick and energizing snack.
Ingredients:
- 150g pitted dates (about 10-12 medium dates)
- 30g IoBoscoVivo gluten-free oat flakes
- 1-2 tablespoons IoBoscoVivo freeze-dried blackcurrant powder
- 30g IoBoscoVivo Tiger Nut or Chufa flakes
- 2 tablespoons seeds (chia, flax, sunflower, etc.)
- 1-2 tablespoons water (if needed)
- A pinch of salt
- Optional for rolling: shredded coconut, tiger nut flour, extra freeze-dried blackcurrant powder, crushed oats.
Preparation:
If the dates are a bit dry, you can soak them in warm water for about 5-10 minutes to soften them. Drain them well before using.
Place the pitted dates in a food processor. Process until you get a sticky and homogeneous paste. You may need to stop the food processor and scrape down the sides several times.
In a medium bowl, mix the tiger nut flakes, oat flakes, freeze-dried blackcurrant powder, seeds, and a pinch of salt.
Add the date paste to the bowl with the dry ingredients. Mix well with a spoon or spatula until all ingredients are well combined and the color is uniform.
Take about a tablespoon of the mixture and roll it between your hands to form balls about 2-3 cm in diameter.
If desired, you can roll the energy bites in shredded coconut, tiger nut flour, extra freeze-dried blackcurrant powder, or crushed oats.
Arrange the energy bites on a baking sheet lined with parchment paper and place them in the refrigerator for at least 15-20 minutes to firm up.
Store the energy bites in an airtight container in the refrigerator for up to a week or in the freezer for up to a month.
Add a teaspoon of shiitake or hericium flour for a nutritional boost.
