Ingredients (for 2-3 servings):
- 1 ripe avocado (about 150 g of pulp)
- 80 g extra dark chocolate (at least 85% cocoa)
- 2-3 tablespoons unsweetened plant-based milk (almond, soy, oat, etc.)
- 2-3 tablespoons IoBoscoVivo erythritol (about 20-30 g, or to taste, adjusting according to desired sweetness)
- 1 teaspoon IoBoscoVivo licorice powder (about 2-3 g, or to taste)
- 1 teaspoon pure vanilla extract (optional)
- A pinch of whole sea salt (about 1/8 teaspoon)
- For garnish (optional): unsweetened cocoa powder
Preparation:
Break the 80 g of dark chocolate into pieces and melt it gently in a double boiler or microwave. Let it cool slightly.
Scoop out the pulp of 1 ripe avocado (about 150 g).
In a powerful blender, combine the avocado pulp, 80 g of melted chocolate, 2-3 tablespoons of plant-based milk, 2-3 tablespoons of erythritol, 1 teaspoon of licorice powder, 1 teaspoon of vanilla extract (if using), and a pinch of salt.
Blend until you get a smooth, homogeneous, and velvety cream. Taste and adjust the sweetness of the erythritol and the intensity of the licorice.
Distribute the mousse into 2-3 individual dessert cups and chill in the refrigerator for at least 1-2 hours to allow it to firm up slightly.
Garnish with unsweetened cocoa, enjoy!
