Zucchini and Vegetable Yogurt Mousse: Light and Quick Recipe (Vegetarian)

Discover the quick and easy recipe for zucchini and vegetable yogurt mousse. A light, vegetarian appetizer or snack, full of flavor. Perfect to enjoy with our breadsticks.
Ingredients for one Serving:
- 2 fresh medium zucchinis (about 300g) or 50g of dried zucchini slices
- 150g natural vegetable yogurt (soy, coconut, almond, etc.)
- 1 tablespoon fresh lemon juice
- 1 tablespoon extra virgin olive oil (optional)
- A few fresh mint leaves (or basil, or chives)
- 1/2 fresh garlic clove (optional)
- Sea salt to taste
- Freshly ground black pepper to taste
- Hot water for rehydrating the zucchini
Preparation:
Wash, trim, and slice the zucchinis, or if you choose dried zucchinis, place them in a bowl and cover them completely with hot water for 20-30 minutes, then remove excess water by gently pressing them.
For fresh zucchinis, you can opt for light cooking to preserve nutrients:
- Steamed: Cook the slices for 8-10 minutes until tender.
- Boiled: Boil in a little unsalted water for the same amount of time.
- Pan-fried: Sauté with a drizzle of oil and garlic until soft.
Drain the cooked zucchinis well and let them cool completely.
Transfer the cooled zucchinis to a blender with the vegetable yogurt, lemon juice, extra virgin olive oil (if using), fresh herbs, garlic (if using), salt, and pepper.
Blend until a smooth and homogeneous cream is obtained.
For a firmer consistency and a more intense flavor, you can chill the mousse in the refrigerator for at least 30 minutes before serving.
