Panna Cotta Vegetale alla Liquirizia

Licorice Vegan Panna Cotta

This is a basic recipe for a plant-based panna cotta flavored with licorice powder. You can customize it with your favorite plant-based drinks and desired amount of sweetener.

Ingredients for 4 servings:

  • 500 ml plant-based drink of choice (e.g., soy milk, oat milk, almond milk, unsweetened coconut milk)

  • 60-90 g erythritol

  • 2 heaped teaspoons organic licorice powder (adjust to taste for desired intensity)

  • 5 g agar-agar powder (or 8-10 g if you prefer a firmer consistency)

  • A pinch of salt (optional, to enhance flavors)

Preparation:

  1. In a saucepan, thoroughly mix the plant-based drink with the erythritol, licorice powder, and a pinch of salt (if using).

  2. Sieve the agar-agar directly into the saucepan to prevent lumps. Whisk thoroughly to distribute it evenly.

  3. Place the saucepan over medium heat and bring the mixture to a boil, stirring continuously. Erythritol may take a little longer to dissolve completely compared to sugar.

  4. Once boiling, reduce the heat and let it simmer gently for 2-3 minutes, stirring constantly. This step is crucial to activate the agar-agar.

  5. Remove the saucepan from the heat and carefully pour the mixture into individual molds or a single mold.

  6. Let it cool at room temperature for a few minutes, then transfer the molds to the refrigerator.

  7. Allow the panna cotta to set in the refrigerator for at least 2-3 hours, or until completely firm.

  8. To unmold the panna cotta (if you used individual molds), you can briefly dip the base of the mold in warm water. Decorate as desired with more licorice powder, fresh fruit, or a sauce.
