Light Chocolate Salami (No Added Sugar and Butter-Free)

This light chocolate salami is a simple and delicious recipe, perfect for an energetic breakfast or a tasty snack without guilt!
Ingredients:
- 150 g IoBoscoVivo gluten-free hazelnut biscuits
- 50 g mixed dried fruit (walnuts, almonds, hazelnuts), coarsely chopped
- 30 g unsweetened cocoa powder
- 50 g erythritol
- 50 ml plant-based milk (almond, oat, soy)
- 30 g virgin coconut oil, melted
- 1 teaspoon vanilla extract (optional)
- Desiccated coconut for coating
Let's prepare it together:
Coarsely crumble the dry biscuits with your hands or by placing them in a food bag and crushing them with a rolling pin. Do not reduce them to powder; they should remain in small pieces. Transfer them to a large bowl.
For a more intense flavor, you can lightly toast the dried fruit in a non-stick pan for a few minutes over low heat. Let cool and then add it to the crumbled biscuits.
In the bowl with the biscuits and dried fruit, add the unsweetened cocoa powder and erythritol. Mix well to distribute the ingredients evenly.
In a small saucepan or microwave, gently melt the virgin coconut oil.
Pour the plant-based milk and melted coconut oil over the dry ingredients. Add the vanilla extract (if using). Mix well with a spoon or spatula until you get a homogeneous and slightly sticky mixture. If the mixture is too dry, add another tablespoon of plant-based milk.
Transfer the mixture onto a sheet of parchment paper or cling film. With your hands, shape the mixture into a salami, compacting it well. Roll the parchment paper or cling film tightly around the mixture, sealing the ends well.
Transfer the "salami" to the refrigerator and let it rest for at least 2 hours, or until it is firm.
Once the salami has solidified, remove it from the refrigerator and discard the parchment paper or cling film.
Roll the salami in the desiccated coconut.
Slice the sweet salami and enjoy! It can be stored in the refrigerator for a few days.
