Pink Protein Pancake Stack with "Chocolate" Sauce

Start your day with a breakfast that combines taste, color, and protein!

Ingredients:

  • 1 pack of IoBoscoVivo Organic Protein Pancake Mix
  • The amount of milk or plant-based drink indicated on the package
  • 1 egg (if required by the package)
  • Extra virgin olive oil for greasing the pan
  • For the pink color: 1-2 teaspoons of IoBoscoVivo Organic Freeze-Dried Raspberry Powder (add gradually until desired color is achieved)

For the "chocolate" sauce (without real chocolate):

  • 1 tablespoon of IoBoscoVivo 100% Organic Unsweetened Cocoa
  • 2 tablespoons of Plant-based Drink
  • 1 teaspoon of maple or agave syrup
  • A pinch of salt

Preparation:

Follow the instructions on the IoBoscoVivo Organic Protein Pancake Mix package.

Add the freeze-dried raspberry powder to the batter and mix gently until a uniform pink color is obtained. Start with 1 teaspoon and add more if you want a more intense pink.

Heat a lightly greased non-stick pan over medium heat. Pour a small amount of pink batter (about 2-3 tablespoons) to form similar sized pancakes. Cook for 1-2 minutes per side, or until bubbles appear and the bottom is golden brown. Gently flip and cook the other side. Repeat with all the batter.

In a small bowl, mix the unsweetened cocoa, chosen plant-based drink, maple or agave syrup, and the pinch of salt until you get a smooth and homogeneous sauce.

If necessary, add another splash of drink to reach the desired consistency.

Place the first pink pancake on a plate. Pour some "chocolate" sauce over it and spread some fresh berries. Stack another pink pancake, add more sauce and fruit. Continue until all the pancakes are used, creating a pink tower.

Decorate the top of the tower with more fresh berries, a drizzle of "chocolate" sauce. You can also sprinkle some freeze-dried raspberry powder on top for extra color and an intense aroma. Garnish with a few fresh mint leaves.
