Ingredients
- 1 sachet of shiitake and apple flavoring
- 1 avocado
- 2 slices of rye bread
- 1 organic free-range egg
- ½ lime
- A handful of datterini tomatoes
- Evo oil to taste
- Salt to taste
Let's prepare it together
First wash and cut the cherry tomatoes in half, put them in a pan with a drizzle of extra virgin olive oil and a pinch of salt and sauté them for about 5 minutes. Add the shiitake and apple seasoning, mix well and sauté for 3 minutes over high heat.
Meanwhile, take the rye bread and toast it lightly in a hot non-stick pan or with a toaster. Once you remove the bread from the pan, cook the sunny side up egg or to your liking.
Finally, prepare the avocado cream: open the avocado in half, remove the stone and, using a spoon, remove the pulp and place it in a bowl. Add a drizzle of oil, salt and the juice of half a lime and mix well.
At this point, make the toast: spread a generous spoonful of avocado cream on the bread, add the sautéed cherry tomatoes with the apple flavoring and place the fried egg on top.
