Bulgur Salad with Vegetables and Shiitake

Summer is approaching! A quick dish to take to the beach? An alternative to classic rice? We offer you Bulgur, a sprouted durum wheat with the same properties as whole wheat, highly satiating and very good.

- 1 sachet of IoBoscoVivo granulated Shiitake mushroom (8g)
- 150g Bulgarian
- 1 carrot
- 1 courgette
- 100g peas
- 1 red pepper
- 1 yellow pepper
- Onion to taste
- 2 tablespoons extra virgin olive oil
- Salt to taste
Preparation:
- Cut the carrots, courgettes and peppers into sticks
- In a pan, add the amount of salted water equal to double the volume of bulgur and cook it for approximately 10 minutes, until the water is completely absorbed (read the instructions for use on the package)
- In a pan, add a little oil, fry the onions, cook the carrots first, then the courgettes, then the peppers and finally the peas. Add salt and 1 sachet of IoBoscoVivo granulated Shiitake mushroom (8g) and finish cooking the vegetables.
- Toast the cashews for a few minutes and add them to the bulgur and vegetables. Mix everything well and serve. Enjoy your meal!
