Barley salad

Ingredients:
- 100g barley
- 40g red cabbage
- 40g edamame
- 30g blueberries
- 1 clove of garlic
- Extra virgin olive oil
- Salt to taste
- Pepper as needed
- Basil leaves
Let's prepare it together:
First wash and cut the red cabbage into thin strips. In a non-stick pan, add a clove of garlic and brown it with a drizzle of extra virgin olive oil, then add the cabbage, the edamame and the hazelnut flavoring and sauté everything in the pan over high heat for about 3 minutes and add salt to taste .
After rinsing it under very cold running water, cook the barley in abundant salted water as indicated on the package, add a red cabbage leaf to the cooking water to give a light violet shade to the barley!!
Once ready, drain the barley and add it to the vegetables, add the blueberries and mix well so as to distribute all the ingredients evenly.
And now, let's plate it with the help of a pastry cutter, add some blueberries and a few basil leaves
and…our barley salad is ready!
