Vegetarian piadina with Shiitake mayonnaise

Have you ever tried making mayonnaise with mushrooms? Today we offer you an egg-free mayonnaise with Shiitake mushrooms that is very easy to make at home, combined with a vegetarian piadina.
Ingredients for Shiitake mayonnaise:
- 1 sachet of IoBoscoVivo dried Shiitake mushroom (8g)
- 100 ml of soy milk
- Seed oil to taste
- Salt to taste
- Half a lemon
Preparation:
- Soak 1 sachet of dried IoBoscoVivo Shiitake mushroom for about 30 minutes
- In a blender jug, add the soy milk and the seed oil and start blending from bottom to top until the mixture begins to thicken, then add the juice of half a lemon.
- Cook the Shiitake mushrooms in a pan for a few minutes and add them to the mayonnaise, blend everything and add a pinch of salt.
Ingredients for the piadina:
- 1 sachet of IoBoscoVivo Shiitake and Almond flavoring
- Wholemeal piadinas
- Vegetables of your choice
- Spreadable cheese
- Salt to taste
- Extra virgin olive oil to taste
- Rosemary to taste
- Parsley to taste
Preparation:
- Cut the vegetables and brush them with oil and rosemary before placing them in the oven at 180°C for 15/20 minutes.
- Take the vegetables out of the oven and brush them with a parsley sauce with oil and 1 sachet of IoBoscoVivo Shiitake and Almond seasoning, put everything back in the oven for 3 minutes, always at 180°C.
- Have fun seasoning your piadina with the ingredients you like most.
