Wholemeal pizza with dried shiitake mushrooms: a rustic and refined taste

IoBoscoVivo wholemeal pizza with dried shiitake mushrooms is a tasty and nutritious variant of the classic pizza. The wholemeal dough provides fiber and vitamins, while the shiitake mushrooms give a rustic and refined flavour.
Ingredients for the dough:
- 500 g of wholemeal flour
- 250 ml of warm water
- 7 g of fresh brewer's yeast
- 1 tablespoon extra virgin olive oil
- 1 teaspoon of salt
Seasoning ingredients:
- 200 g of peeled tomatoes
- 100 g of IoBoscoVivo dried shiitake mushrooms
- 1 clove of garlic
- 1 tablespoon extra virgin olive oil
- Fresh oregano q.b. b.
- Salt q. b.
- Pepper q.b. b.
Preparation:
Dough:
- Dissolve the brewer's yeast in the warm water.
- In a large bowl, mix the wholemeal flour with the salt.
- Add the water with the yeast and the extra virgin olive oil.
- Knead vigorously for 10 minutes, until you obtain a smooth and homogeneous dough.
- Cover the bowl with a cloth and leave to rise in a warm place for 2 hours.
Seasoning:
- Soak the dried shiitake mushrooms in warm water for 30 minutes.
- In a non-stick pan, heat the extra virgin olive oil and fry the chopped garlic.
- Add the squeezed shiitake mushrooms and cook for 5 minutes.
- Add the peeled tomatoes and cook for 15 minutes over medium heat, stirring occasionally.
- Salt and pepper to taste.
Cooking:
- Preheat the oven to 250°C.
- Spread the pizza dough on an oiled baking tray.
- Spread the toppings over the pizza and add the fresh oregano.
- Bake in the oven for 20-25 minutes, until golden brown.
Advice:
- For an even more intense flavour, you can add a little mozzarella or ricotta to the sauce.
- You can customize the pizza with your favorite ingredients, such as olives, dried tomatoes or grilled vegetables.
