Ground Nutmeg

Nutmeg Risotto
Ingredients:
- 320 g Arborio or Carnaroli rice
- 1 liter hot vegetable broth
- 1 small onion, chopped
- 50 g butter
- 50 g grated Parmesan cheese
- 1 teaspoon ground nutmeg
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Method:
- In a saucepan, heat the oil and 25 g of butter and sauté the onion until translucent.
- Add the rice and toast it for 2-3 minutes, stirring continuously.
- Deglaze with a ladleful of broth and cook over low heat, adding the broth little by little, until the rice is al dente and creamy (about 18-20 minutes).
- Halfway through cooking, add the nutmeg and mix well.
- Remove from heat and stir in the remaining butter and Parmesan. Season with salt and pepper.
- Serve hot, perhaps with an extra sprinkle of Parmesan.
Nutmeg Pumpkin Cream Soup
Ingredients:
- 800 g pumpkin, peeled and diced
- 1 chopped onion
- 2 cloves garlic, minced
- 1 liter vegetable broth
- 2 tablespoons extra virgin olive oil
- 1 teaspoon ground nutmeg
- 100 ml cooking cream
- Salt and pepper to taste
Method:
- In a large pot, heat the oil and sauté the onion and garlic until soft.
- Add the pumpkin cubes and cook for 5-7 minutes.
- Pour in the broth and bring to a boil. Simmer until the pumpkin is tender (about 20 minutes).
- Blend the pumpkin with an immersion blender until smooth.
- Add the nutmeg and cream, mix well and cook for another 5 minutes.
- Season with salt and pepper and serve hot, perhaps with a drizzle of olive oil and croutons.
Apple Cake with Nutmeg
Ingredients:
- 3 apples, peeled and sliced
- 200 g sugar
- 200 g all-purpose flour
- 100 g softened butter
- 2 eggs
- 1 tablespoon baking powder
- 1 teaspoon ground nutmeg
- 1/2 tablespoon ground cinnamon
- A pinch of salt
Method:
- Preheat the oven to 180°C and butter a 22 cm diameter cake tin.
- In a bowl, beat the butter with the sugar until creamy.
- Add the eggs one at a time, mixing well.
- Sift the flour with the baking powder, nutmeg, cinnamon and salt and fold them into the butter mixture.
- Add the sliced apples and mix gently.
- Pour the batter into the cake tin and level it.
- Bake in the oven for 35-40 minutes, or until the cake is golden brown and a skewer inserted into the center comes out clean.
- Let cool before serving.
Nutmeg Béchamel Sauce
Ingredients:
- 50 g butter
- 50 g all-purpose flour
- 500 ml milk
- 1 teaspoon ground nutmeg
- Salt and pepper to taste
Method:
- In a small saucepan, melt the butter over medium heat.
- Add the flour and cook, stirring continuously, for 2-3 minutes.
- Gradually add the milk, continuing to stir to avoid lumps.
- Continue to cook and stir until the sauce thickens.
- Add the nutmeg, salt and pepper to taste.
- Use the béchamel sauce to dress pasta, lasagna or other baked dishes.
Nutmeg Golden Milk
Ingredients:
- 250 ml milk (you can use regular or plant-based milk)
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground nutmeg
- 1 tablespoon honey or maple syrup
- A pinch of black pepper (optional, helps absorb turmeric)
Method:
- In a small saucepan, heat the milk over medium heat.
- Add the turmeric, nutmeg, and black pepper, mixing well.
- When the milk is hot, remove from heat and sweeten with honey or maple syrup.
- Mix well and serve hot.
